That Kind of a Day

On Sunday evening, the kids and I were at a mall in Ostrava, running errands. A brand new food court had just opened there so we decided to try out one of the restaurants.

Wrong decision.

While it tasted good, both Caleb and Claire got some food poisoning and have been sick for the past two days.

Bummer. Fortunately for me, I'd ordered something different than them!

Today they're starting to feel a bit better so I asked Caleb what he thought he could eat tonight for dinner. A little grin crossed his face and he said, "You know what I'm thinking about, right?"

Yep. I do. Some things haven't changed since he was a little kid.

There is just nothing like my quick version of tuna noodle when they're not feeling good.

Caleb's Favorite Tuna-Noodle Recipe

2-3 cans tuna
Enough cooked pasta for four (gluten free, in our case)
Mayo (not a whole lot -  maybe a half cup)
Lemon juice (one or two freshly squeezed lemons, depending on what I have on hand!)
Frozen peas, half a bag, slightly cooked in microwave
Salt and Pepper

Mix it all together in the pot after you've drained the noodles. Serve immediately!

Hoping everyone feels better by tomorrow!
