Summer Panzanella

I'm already going to apologize for all the posts that will, most likely, find their way here this summer about our garden!

Gardening is a Patty family tradition, but one that we haven't maintained over the past years due to so many various reasons...lack of time, lack of motivation (when several gardens failed due to much rain, it didn't make us want to try again), and lack of someone to push the project forward.

But this year, thanks to our son Tyler who now lives in Ostrava, it's happening.

And we're already reaping the benefits!

Tonight I made a salad for dinner that was just so perfect. I actually discovered the recipe last summer, and made it several times, but always with ingredients that I bought at the store. It doesn't actually call for lettuce, but I served it over a bed of it because...well, we had it!

I also made my own croutons which were pretty much to die for, made with Hvar olive oil and gluten free bread that I had at home.

Notice someone who's waiting and hoping that I drop some?

Earlier today I was at Tesco and saw this vinaigrette. Wondering if I could substitute it for the dressing in the recipe, I bought it.

For 6 Kc, the equivalent of $.27! It was on sale. Wish I'd bought more!

The finished product was beautiful, delicious and so easy to make.

  1. Some of my favorite recipes are from Ali! This one looks yummy. Your garden looks great. I need to get mine in! I already bought the plants so I'm ahead.
